Parené buchty (recept zo Slovenska)
Minulú noc sme varili jedlo, ktoré som prvýkrát vyskúšala na prekrásnom Slovensku. Jedlo sa volá Parené buchty. Je to druh veľkých na pare varených buchiet s náplňou vo vnútri, ktorá ich robí ťažkými, my sme sa pokúšali prispôsobiť pôvodnému receptu použitím vybranej múky a robením buchiet menšej veľkosti ( myslím, že naše boli asi o polovicu menšie).
Najviac času som minula v supermarkete výberom správneho slivkového džemu na náplň, potrebovala som veľmi hustý, ale nie želatínový. Keby bol želatínový, bol by sa roztopil príliš skoro, a mohol by začať vytekať. Nakoniec som našla džem, ktorý som nikdy predtým nevyskúšala, ale obstál celkom dobre.
Tak, keď chcete skutočný ľudový východoeurópsky dezert, tu je recept na parené buchty.
Potrebujeme
250 ml mlieka
450 g pšeničnej múky
1 vajce
350 g hustého slivkového džemu
25 g kvasníc
2 čajové lyžice cukru
Štipku soli
1-2 čajové lyžičky rastlinného oleja
Výroba 24 buchiet (3-4 kúsky na servírovanie)
Trošku zohrejeme mlieko, len aby malo vyšiu ako izbovú teplotu. Rozpustíme kvasnice v približne polovici mlieka.
Pridáme zostávajúce mlieko, múku, vajcia, cukor a soľ. Rozšľaháme šľahačom a potom zamiešame rukou. Cesto zakryjeme a necháme 30-40 minút , kým nenarastie do približne dvojnásobnej veľkosti.
Keď cesto narastie, rozvaľkáme ho aby bolo tenké cca 7 mm a rozkrájame na 24 štvorcových kúskov. Dávajte si pozor, aby ste nedali príliš veľa džemu, inak sa cesto roztrhne a náplň vytečie!
Teraz vyrobíme buchtičky najprv skladaním krajov a nakoniec spojíme celé. Položíme buchty na plochu posypanú múkou zlepenou časťou dole. Zakryjeme suchou utierkou a necháme odpočívať aspoň 20 minút. Dáme zovrieť vodu.
V kastróle dáme variť 2 poháre vody a vložíme parák nad vriacu vodu. Natrite ho nejakým rastlinným olejom aby sa nám k nemu buchty neprilepili!
Položíme buchty do paráka . Necháme medzi nimi miesto, aby mohli narásť My sme položili 6 kúskov, ale to samozrejme záleží od ich veľkosti a veľkosti hrnca.
/ Ak nemáte parák, dajte do širšieho kastróla ½ objemu vody, okolo horného okraja kastróla pripevnite použijúc uši kastróla a povraz riedku utierku. Keď voda zovrie vkladáme buchty, necháme voľný priestor, aby sa buchty nezlepili. Prikryjeme vypuklou pokrievkou alebo rovnako širokou kovovou miskou /
Zapamätajte si čas kedy vkladáte buchty do paráka a varte ich nad parou 20 minút. Voda musí stále vrieť. Neodkrývajte počas varenia, inak buchty nenarastú a budú tvrdé. Po 20 minútach buchty vyberieme, pričom každú prepichneme vidličkou. Keď budete variť druhú várku skontrolujte hladinu vody v hrnci. Pokiaľ je to nutné doplňte vodu a počkajte kým zovrie. Potom vložte pripravené buchty. Je výhodnejšie variť buchty v čo najširšom hrnci.
Ako som sa naučila, je veľa spôsobov, ako podávať parené buchty. Napríklad, keď som bola na Slovensku, servírovali sme si ich s čokoládovým pudingom, môžete ich taktiež podávať s rozpusteným maslom a posypať škoricou a práškovým cukrom, alebo použiť iný typ dressingu. Moja mama a ja volíme čokoládový dressing preto sme ho použili ako jednoduchú ozdobu.
Hotové buchty by mali byť pórovité a ľahké, ako nedopečený chleba.
